Black Bean and Rice Pita

Ingredients

1 cup Brown Minute Rice
2 cups Water
15 oz can Black Beans, rinsed and drained
15 oz can Corn, rinsed and drained
3 Green Onions, chopped
1 tsp Salt
1/4 tsp Pepper
1/2 cup Salsa
3 Pita Bread rounds, halved

**Serve with:**
Romaine Lettuce
Yogurt or Sour Cream
Fresh Salsa/**ingredients below
15oz can chopped or crushed tomatoes
1TB fresh lime juice
1/2 small red onion, chopped finely
2 tsp. minced garlic
4oz can diced green chilis
1/2 tsp salt
1/2 tsp crushed red pepper

Instructions

Created on October 3rd, 2006

Bring 2 cups water to al boil in a small saucepan; stir in rice. Cover and let set 10 minutes.

While rice is setting,make salsa
**In a small mixing bowl, combine tomatoes, lime juice, onion, garlic, chilis, salt and red pepper. Cover and chill for at least 1 hour.

After rice is ready, in a large mixing bowl combine rice, black beans, chilis, corn, green onions, salt, pepper and 1/2 cup salsa. Gently toss. Cover and chill if desired.

Cut pita rounds in half. Line with lettuce. Spoon rice mixture into each half; top with salsa and sour cream or yogurt. Enjoy!
