Fall Fruits salad w/ lemon poppyseed dressing

Ingredients

½ cup Sugar
½ cup Lemon Juice
2 tsp. Diced Onion
1 tsp. Dijon Mustard
½ tsp. Salt
2/3 cup Vegetable Oil
1 TB Poppy Seeds

Salad Ingredients:
1 head Romaine Lettuce,
washed and torn into bite sized pieces
1 ½ cup shredded Mozzarella Cheese
1 cup chopped Walnuts (or any other nut)
¼ cup Dried Cranberries
1 Apple, peeled, cored and diced
1 Pear, peeled cored and diced

Dressing Instructions:
In a food processor or blender, combine sugar, lemon juice, onion, mustard and salt. Process until well blended. With machine running, add oil in a slow steady stream until mixture is thick and smooth. Add poppy seeds and process a few seconds more.

Salad Instructions:
In a large serving bowl, combine the romaine lettuce, shredded cheese, nuts, cranberries, apples and pears. Toss to mix then p our dressing over salad just before serving and toss to coat.
