Cajun Chicken Lasagna

Ingredients

1-9oz box No Boil Lasagna Noodles
1lb (2-3) Chicken Breasts, cut into bite size pieces
2 tsp. Cajun Seasoning
3 TB Olive Oil
1 small Yellow Onion, chopped
½ cup Celery, chopped
1 Red Bell Pepper, chopped
1 TB (4 garlic cloves) Garlic, chopped
2 – 15oz jars Alfredo Sauce
16 oz Mozzarella Cheese, shredded
1 – 5 oz pkg. Parmesan Cheese, shredded

Instructions

Created on February 15th, 2010

Preheat oven to 350 degrees.


In a medium mixing bowl, combine shredded mozzarella and parmesan cheese. Set aside.


In a large skillet heat olive oil over medium – high heat.


Add chicken sprinkled with Cajun seasoning.


Cook until chicken is no longer pink, about 8 minutes.


Remove  meat with slotted spoon and set aside.


In the same pan, saute onion, celery, bell pepper and garlic until tender.


Remove from heat and add, chicken and 1 jar of Alfredo Sauce.


Lightly grease a 9x13 baking dish.


Spoon 1/2 of second jar of alfredo sauce onto the bottom of the pan.


Lay 1/3 of the lasagna noodles on top of sauce.


Spread ½ of the chicken mixture on top of the noodles.


Sprinkle 1/3 of the cheese mixture on top of chicken mixture.


Repeat layers : noodles, chicken, cheese.


Final layer: Noodles,  the remaining part of the second jar of alfredo sauce and cheese.


Bake in preheated oven for 1 hour or until bubbly.


Let stand 15 minutes before serving. Enjoy!
