Cheesecake in a jar

Ingredients

1 C graham cracker crumbs (about 1/2 a sleeve worth)
1 T sugar
2 T melted butter
1 8 oz package cream cheese. room temperature
1 14 oz can sweetened condensed milk
1/2 t lemon juice (bottled is fine)
1 21 oz can cherry pie filling
Redi whip
7 half pint jars
7 lids and rings

Make sure your jars are clean and dry before starting.

For the graham crackers either crush 1 pkg in food processor or buy the crumbs already crushed (that's the easy way!)

After you have crumbs, melt 2 TB butter in a medium mixing bowl.

Add the graham cracker crumbs and 1 TB sugar. Mix together and set aside.

In another medium mixing bowl, beat cream cheese until smooth.

Add sweetened condensed milk and beat for 3 minutes, scraping bottom as needed to make sure all the cream cheese is incorporated.

Add 1/2 tsp. Lemon juice and beat for another minute.

Time to fill your jars :)

Spoon 2 heaping tsps of graham cracker mixture into bottom of a clean glass jar

Next layer 2 TB of cream cheese mixture on top of graham cracker crust.

Next layer 2 TB of Cherry Pie filling on top. Spread around to coat top.

Spray a topping of Redi-whip on top of pie filing.

Smooth it with a spoon and repeat all layers, ending with the Redi-whip

Place lid on jar and refrigerate at least 1 hour before serving.

These will keep for a couple of days if you want to make ahead of time.
