Chicken & Sun dried Tomato

Ingredients

1 Rotisserie Chicken
1/4 cup Butter
1 Yellow Onion
1 (7.5 oz) jar sund-dried tomatoes, packed in oil, drained and sliced
1 TB minced Garlic
1/4 cup Flour
3/4 tsp. Salt
1/4 tsp. Pepper
3 1/2 cups whole milk
1 (3oz) pkg Cream Cheese, softened
1 cup Grated Parmesan
1/4 cup chopped fresh basil (or 1 TB dried Basil)
1 lb Bow Tie Pasta, cooked and drained

Instructions

Remove meat from rotesserie chicken and chop or tear into bite size pieces. Set aside.

In a large saucepan, melt butter over medium heat.

Add onion, sun-dried tomatoes, and garlic.

Cook for 10 minutes or until onion is tender.

Add flour, salt and pepper, and cook stirring constantly, for 2 minutes.

Gradually add milk, and stir to blend.

Bring mixture till just starting to bubble, reduce heat to medium-low, and cook for 3 minutes. stirring constantly.

Add cream cheese and parmesan cheese, and stir until cheese is melted.

Add chicken and basil, cook for 2-3 more minutes.

Serve over hot cooked pasta and Enjoy!!
