Preheat oven to 400 degrees. Spray a mini muffin pan with cooking spray. In a large mixing bowl, combine the flour, baking powder, baking soda, salt and 2 tsp. cinnamon. In another large mixing bowl, whisk together the egg, brown sugar, apple butter, vanilla, honey, apple cider, yogurt and oil. Pour the wet ingredients into the dry ingredients and stir until combined. Don't overmix - a few lumps are ok :) Using a cookie scoop, put the batter into the pan filling each hole 3/4 full. Bake for 10-12 minutes or until center is done. cool a couple of minutes. While muffins are baking, combine the 1/4 cup sugar with the 1 TB cinnamon. Brush the top of the still warm muffin with the melted butter then roll in the cinnamon sugar mixture to coat. Serve warm or room temperature. **You can dust with powdered sugar if you prefer. Enjoy!!
