Baked Potato Soup

Ingredients

- 4 large baked potatoes
- 2/3 cup butter
- 2/3 cup flour
- 6 cups milk
- 1 tsp salt
- 3/4 tsp pepper
- 1 1/2 cups cheddar cheese, shredded
- 12 slices cooked bacon, crumbled
- 4 green onions, chopped and divided
- 1 (8 oz) ctn sour cream

Instructions

  1. Wash potatoes; prick several times with a fork. Bake at 400 degrees for 1 hour or until done; cool.

  2. Cut potatoes in half lengthwise; scoop out pulp, and reserve. Discard shells.

  3. Melt butter in large pan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.

  4. Stir in potato, salt, pepper, 1-cup cheese, half of the crumbled bacon, and half of the green onions; cook until heated (DO NOT BOIL). Stir in sour cream; cook until just heated (DO NOT BOIL).

  5. Serve. Sprinkle servings with remaining cheese, green onions, and bacon.
