Breakfast Strudel

Prep Time: 45 minutes
Cook Time: 30 minutes

Ingredients

- 1 box Puff Pastry dough (1.1 lb)
- 2 TB butter
- 1 cup Frozen cubed Hash Brown Potatoes
- 1 cup chopped Red or Green bell peppers
- 1/2 cup Onion, chopped
- 1 cup smoked Ham, diced
- 11 eggs (Yes that is 11!)
- 2 TB minced Green Onions
- 4 oz Cream Cheese, softened
- 2 TB Orange Juice
- 1 egg
- 1 TB water
- 2 TB Parmesan Cheese, shredded

Instructions

Preheat oven to 400 degrees.

Thaw pastry according to package directions, about 30 minutes.

Melt butter in a large skillet over medium-high heat. Add potatoes and sauté for 5 minutes. Stir in bell pepper and onion; sauté for 3 minutes, then add ham.

In a large mixing bowl, whisk 11 eggs and green onions together.

Add them to the large skillet and scramble just until set (they should be a little soft). Season with salt and pepper.

Remove from heat. Stir in cream cheese and orange juice until blended.

Place in refrigerator while rolling out the pastry.

Unfold a pastry sheet onto a surface that has been lightly dusted with flour.

Roll pastry to 12 x 10, then transfer to a piece of parchment paper on a cookie sheet.

Fill with half the egg mixture and braid.

Repeat with remaining pastry and egg filling.

In a small mixing bowl, combine 1 egg and 1 TB of water. Brush over top of strudels and sprinkle with parmesan cheese.

(At this point, strudels may be wrapped in plastic and chilled overnight)

Bake strudels for 20 - 30 minutes or until golden.

Let cool for 5 minutes before slicing.
