Fresh Fruit Tart

Ingredients

Crust:
- 2 cups crushed graham crackers or ginger snaps
- 2 tablespoons sugar
- 1/3 cup melted butter

Filling:
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 2 teaspoons lemon juice
- 1/2 cup whipping cream

Topping:
- Assorted fruit: strawberries, blueberries, raspberries, grapes, kiwi
- 1/4 cup apricot preserves
- 1 tablespoon water

Instructions

  1. Preheat oven to 350 degrees.

For crust:

  • In a medium bowl, combine ground crumbs, sugar, and melted butter. Mix well until a crumbly mixture forms.
  • Press into a pizza pan or 6 individual tart pans.
  • Bake for 8 minutes. Let cool.

For filling:

  • Combine cream cheese, sugar, and lemon juice with an electric mixer.
  • Add whipping cream and beat until light and fluffy.
  • Spread into cooled crust and chill for several hours.

For topping:

  • Arrange sliced fruit on top of filling.
  • Combine apricot preserves and water, and brush over top of fruit.
  • Enjoy!
