In large mixing bowl, combine flour and salt; cut in shortening with a pastry blender until mixture is crumbly. Sprinkle ice water, 1 TB at a time, evenly over surface; stir with a fork until dry ingredients are moistened. Shape into a ball; cover and chill until ready to use.
To roll out pastry:
Roll pastry to 1/8-inch thickness on a lightly floured surface. Place in pie plate; trim off excess pastry along edges. Fold edges under, and crimp. Chill.
For baked pastry shell:
Prick bottom and sides of pastry shell with a fork. Chill pastry until ready to bake. Brush with egg wash. Bake at 450 degrees for 10 – 12 minutes or until golden.
To make egg wash:
Mix 1 egg and 1/4 cup of water.
