Gooey Butter Cake

Ingredients

**Crust Ingredients:**
- 1 (18 ¼ oz) pkg. Yellow Cake Mix
- 1 egg
- 1 stick Butter, melted

**Filling Ingredients:**
- 8 oz pkg. Cream Cheese, softened
- 2 eggs
- 1 tsp. Vanilla
- 1 stick Butter, melted
- 16 oz box Powdered Sugar

Instructions

Created on November 3rd, 2006

  1. Preheat oven to 350 degrees.
  2. Spray 9x13 baking dish with Pam.
  3. In a large bowl, combine cake mix, 1 egg, and 1 stick of melted butter.
  4. Pat into prepared baking dish.
  5. In the same bowl, beat cream cheese until smooth.
  6. Add 2 eggs and vanilla and blend.
  7. Add butter; blend.
  8. Add powdered sugar and mix well.
  9. Spread over crust.
  10. Bake for 40 – 50 minutes. You want the center to be a little gooey, so careful not to over bake.

VARIATIONS:

  1. Add a 20 ounce can of drained crushed pineapple to the filling.
  2. Use a lemon cake mix instead of yellow cake mix. Add 2 TB Lemon juice and some zest to the filling.
  3. Use a chocolate cake mix instead of yellow cake mix. Add 1 cup chocolate chips and 1/2 cup chopped nuts to filling.
  4. Use a spiced cake mix instead of yellow cake mix. Add 1/2 cup chopped nuts and 1 cup chopped carrots to filling.
  5. Use a chocolate cake mix instead of yellow cake mix. Add 3/4 to 1 cup of peanut butter to filling.
