White Chicken Chili

Ingredients

- 3 TB Vegetable Oil
- 4 cooked chicken breasts or 1 Rotisserie Chicken
- 1 Yellow Onion, chopped
- 2 cans Chicken Broth
- 2 (4oz) cans chopped Green Chilis
- 2 (15oz) cans Great Northern Beans, undrained
- 1 can Cream of Chicken Soup
- 1 TB Garlic Powder
- 2 tsp ground Red Pepper
- 2 tsp ground Cumin
- 1 tsp Oregano

To cook Chicken Breasts:

  1. Place chicken in a baking dish, pour in 1 can of chicken broth, cover with tinfoil, and bake at 350 degrees for 1 hour. Remove chicken and reserve broth.
  2. If using baked chicken breasts, shred meat and season with pepper and garlic salt.
  3. If using rotisserie chicken, remove meat and shred - no need to season.

In a large pot over medium-high heat, heat vegetable oil. Add onions and cook until onions are clear.

  1. Add chicken and saute for 2-3 minutes.
  2. Add remaining ingredients - chicken broth, green chilis, great northern beans, cream of chicken soup, garlic powder, cumin, oregano, and red pepper.
  3. Bring to a boil, then reduce heat and simmer for at least 30 minutes.
  4. Serve and enjoy!

Serving tip:

Cut flour tortilla into 1/4 inch strips, place in the bottom of bowl. Ladle chili on top. Garnish with sour cream and grated mozzarella cheese. Enjoy!
