Chicken Spaghetti with Mushrooms

Ingredients

- 6 chicken breasts, cooked and shredded
- 4 TB butter
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1/2 cup minced celery
- 6-8 sliced fresh mushrooms
- 2 cans cream of mushroom soup
- 1 can cream of chicken soup
- 1 tsp salt
- 1/4 tsp white pepper
- 2 cups whipping cream
- 1/4 cup cooking sherry
- 1 inch cube of Velveeta cheese, cut up
- 16 oz pkg spaghetti noodles, cooked, drained, and rinsed

In a large skillet, saute onion, garlic, and celery in butter until tender. Add mushrooms and saute 2-3 minutes. Add soups, whipping cream, Velveeta, chicken, salt, and pepper. Stir until cheese is melted. Add sherry. Mix well. Grease a large casserole pan. Place 1/2 of the spaghetti noodles in the pan. Pour 1/3 of the chicken mixture over. Layer remaining spaghetti and pour remaining mixture over. Bake at 350 degrees for 30-45 minutes or until bubbly. Enjoy!
