Created on February 15th, 2010
Preheat oven to 350 degrees.
In a medium mixing bowl, combine shredded mozzarella and parmesan cheese. Set aside.
In a large skillet, heat olive oil over medium-high heat.
Add chicken sprinkled with Cajun seasoning.
Cook until chicken is no longer pink, about 8 minutes.
Remove meat with slotted spoon and set aside.
In the same pan, sauté onion, celery, bell pepper, and garlic until tender.
Remove from heat and add chicken and 1 jar of Alfredo Sauce.
Lightly grease a 9x13 baking dish.
Spoon 1/2 of the second jar of Alfredo sauce onto the bottom of the pan.
Lay 1/3 of the lasagna noodles on top of the sauce.
Spread ½ of the chicken mixture on top of the noodles.
Sprinkle 1/3 of the cheese mixture on top of the chicken mixture.
Repeat layers: noodles, chicken, cheese.
Final layer: Noodles, the remaining part of the second jar of Alfredo sauce, and cheese.
Bake in preheated oven for 1 hour or until bubbly.
Let stand 15 minutes before serving. Enjoy!
