Cajun Chicken Lasagna

Ingredients

- 1-9 oz box No Boil Lasagna Noodles
- 1 lb (2-3) Chicken Breasts, cut into bite-size pieces
- 2 tsp Cajun Seasoning
- 3 TB Olive Oil
- 1 small Yellow Onion, chopped
- ½ cup Celery, chopped
- 1 Red Bell Pepper, chopped
- 1 TB (4 garlic cloves) Garlic, chopped
- 2 – 15 oz jars Alfredo Sauce
- 16 oz Mozzarella Cheese, shredded
- 1 – 5 oz pkg Parmesan Cheese, shredded

Instructions

Created on February 15th, 2010

  1. Preheat oven to 350 degrees.

  2. In a medium mixing bowl, combine shredded mozzarella and parmesan cheese. Set aside.

  3. In a large skillet, heat olive oil over medium-high heat.

  4. Add chicken sprinkled with Cajun seasoning.

  5. Cook until chicken is no longer pink, about 8 minutes.

  6. Remove meat with slotted spoon and set aside.

  7. In the same pan, sauté onion, celery, bell pepper, and garlic until tender.

  8. Remove from heat and add chicken and 1 jar of Alfredo Sauce.

  9. Lightly grease a 9x13 baking dish.

  10. Spoon 1/2 of the second jar of Alfredo sauce onto the bottom of the pan.

  11. Lay 1/3 of the lasagna noodles on top of the sauce.

  12. Spread ½ of the chicken mixture on top of the noodles.

  13. Sprinkle 1/3 of the cheese mixture on top of the chicken mixture.

  14. Repeat layers: noodles, chicken, cheese.

  15. Final layer: Noodles, the remaining part of the second jar of Alfredo sauce, and cheese.

  16. Bake in preheated oven for 1 hour or until bubbly.

  17. Let stand 15 minutes before serving. Enjoy!
