Crab Cakes

Ingredients

- 1 cup seasoned bread crumbs
- 1 egg, beaten
- 1/3 cup milk
- 2 cans crab meat, drained
- 2 tsp crab boil seasoning
- 1 TB baking powder
- 1 TB chopped parsley
- 1/2 red bell pepper, chopped
- 1 tsp Worcestershire sauce
- 1 tsp hot pepper sauce
- 2 TB tartar sauce
- 1 tsp horseradish
- 1 Jiffy cornbread mix
- Vegetable oil for frying

  1. Combine bread crumbs, egg, and milk.

  2. Add crab meat, crab boil seasoning, baking powder, parsley, red pepper, Worcestershire sauce, hot pepper sauce, tartar sauce, and horseradish. Mix all ingredients well and form into patties.

  3. Coat patties with cornbread mix and set aside.

  4. Add 1/2 inch of vegetable oil to a skillet and heat to medium to medium-high temperature.

  5. Fry cakes for 3 minutes on each side.

  6. Remove and drain on paper towels.

  7. Serve with red sauce, tartar sauce, or enjoy just the way they are!
