Light & Fluffy Pancake Mix

Ingredients

- 3 cups all-purpose flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3/4 teaspoon nutmeg

Wet Ingredients for Plain Pancakes:
- 1 egg
- 1 cup plain yogurt or buttermilk
- 1 tablespoon vegetable oil
- Berries (frozen work best)
- Blueberries
- Raspberries
- Blackberries

  1. Combine all ingredients with a whisk.

  2. Store in an airtight container.

To make plain pancakes:

  1. In a large bowl, whisk together egg, yogurt or buttermilk, and oil.
  2. Add 1 cup pancake mix; stir to combine. Leave in the lumps! They’re good.
  3. Melt 1 tablespoon butter onto a griddle or large pan that has been heated over medium/high heat.
  4. Pour 1/4 cup pancake batter onto griddle and sprinkle with 4-5 berries, if desired.
  5. Cook 2-3 minutes on each side.
  6. Serve with butter, syrup, and powdered sugar.
