Potato Skins

Prep Time: 20 minutes
Cook Time: 25 minutes

Ingredients

- 5 lb bag of potatoes (these are smaller and better bite size)
- 1 stick butter, melted
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1 tsp pepper
- 2 cups Cheddar/Jack cheese, grated

Optional Toppings:
- 8 oz sour cream
- 4 green onions, chopped
- 7 strips of bacon, cooked crisp and crumbled

Instructions

Created on October 18th, 2010

  1. Bake potatoes until done. (I use my microwave - it's faster)

  2. Cut potatoes in half, scoop out center, leaving a 1/4 inch shell.

  3. Place potato skins on a greased baking sheet.

  4. In a small mixing bowl, combine butter and seasonings.

  5. Brush over both sides of potato skins.

  6. Bake in preheated oven at 475 degrees for about 7 minutes.

  7. Turn over and bake on the other side until crisp, about 7 more minutes.

  8. Remove from oven and sprinkle grated cheese and bacon on top of skins.

  9. Turn oven to broil and broil until cheese is bubbly and melted.

  10. Place on serving dish. Top with sour cream and onions.
