Pumpkin Pancakes

Ingredients

- 1 cup light and fluffy pancake mix

Additional dry ingredients:
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- Pinch of ground cloves
- Chocolate chips if desired

Wet ingredients:
- 1 cup buttermilk
- 6 tbsp pumpkin puree
- 2 tbsp melted butter
- 1 egg

In a large bowl, whisk together pancake mix, cinnamon, ginger, and cloves.

In a medium bowl, whisk together milk, pumpkin, melted butter, and egg.

Fold wet ingredients into dry ingredients. Stir until combined; leave the lumps. They're good!

Heat griddle or large pan over medium-high heat.

Add 1 tbsp butter to pan; let melt.

Pour 1/4 cup batter onto buttered griddle.

Sprinkle chocolate chips onto pancake, if desired.

Cook for 3 minutes on each side.

Serve with butter, syrup, and/or powdered sugar or cinnamon sugar.
