Red Velvet Pancakes

Cook Time: 15 minutes

Ingredients

- 1 cup light and fluffy pancake mix

### Additional Dry Ingredients:
- 3 TB Sugar
- 1 TB unsweetened Cocoa Powder

### Wet Ingredients:
- 1 egg
- 3/4 cup Buttermilk
- 1/4 cup Sour Cream
- 2 tsp Red Food Coloring
- 2 tsp Vanilla

### Optional:
- 1/2 cup chocolate chips (any kind you prefer)

  1. Combine all dry ingredients in a large bowl and set aside.

  2. In a separate bowl, whisk together the egg, buttermilk, sour cream, food coloring, and vanilla.

  3. Add wet ingredients to dry, and mix just until combined. Lumps are good!

  4. Add chocolate chips and fold into the batter. (If you don't want the chocolate chips, just skip this step.)

  5. Melt 1 TB butter onto a griddle or large pan that has been heated over medium/high heat.

  6. Pour about 1/4 cup of batter onto griddle and cook until bubbles start appearing and edges begin to cook. Flip pancakes and cook for about 2-3 minutes more.

  7. Sprinkle powdered sugar on top and serve with maple syrup.
