Bake potatoes in oven or microwave until done. Spray a 9x13 baking pan with cooking spray Slice in half and carefully scoop the potato out of its peel. You'll use the shell of the peel to stuff the potato. Combine the butter, sour cream, and a little of the heavy cream. Mash with potato masher or use and electric mixer to combine. Add seasonings and mix well. Stir in 2 cups of grated cheese and onions if you desire. Start stuffing your potato shells and place them on a prepared baking pan. Sprinkle remaining cheese on top and add bacon bits and green onions if desired. Bake in a 350 degree oven for 15-20 minutes. These can be made ahead up to 3 days or frozen. If you freeze, don't add the green onions. Green onions do not freeze well according to the Pioneer Woman - and I BELIEVE HER :D Serve and enjoy!
