Preheat oven to 400 degrees. Peel, core and chop apple. Grate carrots. Place in a bowl and set aside. In a large mixing bowl, combine cereal, flour, sugar, soda, cinnamon and salt. In a small mixing bowl, beat the egg, buttermilk and oil. Stir the wet ingredients into the dry ingredients until just moistened. Fold in the apple, carrots and walnuts. Place paper liners in muffin cups or coat muffin cups with non-stick cooking spray. Fill cups 3/4 full. Bake at 400 degrees for 18-23 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm and enjoy!
