Apple Carrot Muffins

Cook Time: 23 minutes

Ingredients

- 1 3/4 cup Raisin Bran Cereal
- 1 1/4 cup Flour
- 3/4 cup Sugar
- 1 1/4 tsp Baking Soda
- 1 tsp Ground Cinnamon
- 1/4 tsp Salt
- 1 egg
- 3/4 cup Buttermilk*
- 1/4 cup Canola Oil**
- 1 Granny Smith Apple, peeled, cored, and finely chopped
- 1 Carrot, grated (should equal 3/4 cup)
- 1/4 cup Chopped Walnuts

*If you don't have buttermilk, add 1 tsp white vinegar to 1 cup of milk. Let sit for a few minutes, then measure out what you need.

**Substitute 1/4 cup applesauce for oil to make these healthier.

Instructions

  1. Preheat oven to 400 degrees.

  2. Peel, core and chop apple. Grate carrots. Place in a bowl and set aside.

  3. In a large mixing bowl, combine cereal, flour, sugar, baking soda, cinnamon, and salt.

  4. In a small mixing bowl, beat the egg, buttermilk, and oil.

  5. Stir the wet ingredients into the dry ingredients until just moistened.

  6. Fold in the apple, carrots, and walnuts.

  7. Place paper liners in muffin cups or coat muffin cups with non-stick cooking spray.

  8. Fill cups 3/4 full.

  9. Bake at 400 degrees for 18-23 minutes or until a toothpick comes out clean.

  10. Cool for 5 minutes before removing from pan to wire rack.

Serve warm and enjoy!
