Artichoke Couscous Salad

Ingredients

- 10 ounce box Near East Couscous
- 15 ounce can artichoke hearts, chopped
- 1 cup slivered almonds
- 1 cup sun dried tomatoes
- 1 cup fresh shredded or grated Parmesan Cheese
- 1/4 cup Italian dressing of choice *you can use premade or make the sweet/sour Italian dressing on this website
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

Makes 8 servings

Instructions

  1. Cook couscous according to package directions. Toss to fluff and chill until cooled.
  2. Add the rest of the ingredients, stirring to combine. Serve or chill until ready to serve.

** sweet/sour Italian dressing recipe
1 cup sugar
1 1/2 cups apple cider vinegar
2 packets Good Seasons Italian Dressing Mix
2 ice cubes
1/4 cup vegetable oil

Bring vinegar to a boil.
2. Remove from heat.
3. Add sugar and stir until dissolved.
4. Add dressing mix, then ice.
5. Stir until the ice melts, then add oil.
6. Store in a covered container in the refrigerator.
7. Shake well before serving

this will last 14 days in refrigerator.
