Baked Linguine

Prep Time: 20 minutes
Cook Time: 60 minutes

Ingredients

- 1 lb ground beef
- 1 tsp minced garlic
- 28 oz can crushed tomatoes
- 8 oz can tomato sauce
- 6 oz can tomato paste
- 2 tsp sugar
- 1/2 tsp salt
- 8 oz linguine
- 16 oz container sour cream
- 8 oz package cream cheese
- 1 bunch green onions, chopped
- 1 1/2 cups shredded mozzarella cheese
- Cooking spray

Instructions

  1. Cook beef and garlic in a Dutch oven, stirring until beef crumbles and is no longer pink. Drain beef mixture; pat dry with paper towels, place beef back in pan.

  2. Stir in tomatoes, tomato sauce, tomato paste, sugar, and salt; simmer for 30 minutes. Set meat sauce aside.

  3. Cook pasta according to package directions; drain.

  4. Place pasta in a 13 x 9 baking dish coated with cooking spray.

  5. Stir together sour cream, cream cheese, and green onions. Spread over linguine. Top with meat sauce.

  6. Bake at 350 degrees for 20 – 25 minutes or until thoroughly heated. Sprinkle with mozzarella cheese and bake 5 minutes more or until cheese is melted. Let stand 5 minutes before serving.

To make this low-fat, you can use nonfat sour cream and fat-free cream cheese. To cut sodium, omit salt and use reduced sodium canned tomato products.
