Beef and Bean Chili

Ingredients

- 4 stalks celery, chopped
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 1 tablespoon vegetable oil
- 2 lbs ground beef
- 15 oz can tomato sauce
- 6 oz can tomato paste
- 2 cups water
- 6 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 16 oz can kidney beans, undrained

Extras:
- Fritos
- Cheddar cheese
- Sour cream

Instructions

In a large Dutch oven, heat oil over medium-high heat.

Add celery, green onions, garlic, yellow onion, and bell pepper. Cook for 5 minutes or until tender.

Add ground beef and cook until browned and crumbled. Drain grease.

Add tomato sauce, tomato paste, water, chili powder, salt, and pepper. Stir well and bring to a boil; reduce heat, and simmer, uncovered for 30 minutes or to desired consistency.

Add beans during the last 15 minutes. Serve and enjoy!

Serving ideas:

Top with grated cheese and sour cream.

Make individual Frito pies - using snack-size Fritos, spoon chili on top of Fritos, top with sour cream and grated cheese.
