Black Bean Queso

Ingredients

- 2 TB Butter
- 1/2 Yellow Onion, chopped
- 4 oz can Green Chilies
- 1 can Rotel diced chilies and tomatoes
- 1/2 tsp Salt
- 1/2 tsp Garlic Powder
- 1/2 tsp Black Pepper
- 1/4 jalapeno, finely chopped
- 1 can Black Beans, drained
- 8 oz Shredded Cheddar Cheese
- 4 oz Velveeta, cut into small cubes
- 3 oz Cream Cheese, softened

Instructions

  1. In a large skillet, melt butter on medium heat.

  2. Add onions, sauté until tender and clear.

  3. Add green chilies, Rotel, salt, pepper, and garlic powder.

  4. Cook for 5 minutes.

  5. Add jalapeno, black beans, and cheeses; simmer until hot and bubbly.

  6. Serve with tortilla chips. Enjoy!
