Bring 2 cups water to a boil in a small saucepan; stir in rice. Cover and let set 10 minutes.
While rice is setting, make salsa. In a small mixing bowl, combine tomatoes, lime juice, onion, garlic, chilis, salt, and red pepper. Cover and chill for at least 1 hour.
After rice is ready, in a large mixing bowl combine rice, black beans, chilis, corn, green onions, salt, pepper, and 1/2 cup salsa. Gently toss. Cover and chill if desired.
Cut pita rounds in half. Line with lettuce. Spoon rice mixture into each half; top with salsa and sour cream or yogurt. Enjoy!
