Caramel Popcorn

Prep Time: 15 minutes
Cook Time: 60 minutes

Ingredients

- 1 cup butter
- 2 cups brown sugar
- 1/2 cup corn syrup
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp vanilla
- 3 bags popped microwave popcorn

Instructions

  1. Preheat oven to 250 degrees.

  2. Place popcorn in a very large bowl.

  3. In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 4 minutes.

  4. Remove from heat and stir in soda and vanilla. Slowly pour over popcorn, stirring to coat.

  5. Place in a large baking dish and bake in preheated oven for 1 hour. Stir every 15 minutes.

  6. Remove from oven and let cool completely before breaking into pieces. Store in an airtight container.
