Cheesy Chicken Chowder

Ingredients

- 3 cans chicken broth
- 3 potatoes, peeled and diced
- 4 celery stalks, diced
- 4 carrots, peeled and diced
- 1 yellow onion, diced
- 1 can corn, drained
- 1/3 cup butter
- 1/3 cup flour
- 2 tbsp corn starch
- 3 cups milk
- 1 tbsp soy sauce
- 1 tsp red pepper
- 1 lb Velveeta, cubed
- 3 chicken breasts, cooked and shredded **OR**
- 1 cooked rotisserie chicken, deboned and shredded

Instructions

In a large pot combine chicken broth, potatoes, celery, carrots, onion, and corn. Cover and bring to a slow boil for 15 minutes or until vegetables are tender when pricked with a fork.

In a medium saucepan, melt butter over low heat. Add flour and corn starch. Let simmer for 1 minute and then increase temperature to medium. Add milk gradually, stirring constantly. Continue to stir until thick and bubbly. (This happens suddenly)

Add flour mixture to vegetables. Add soy sauce, cheese, and chicken. Continue to stir until cheese is melted.

Serve and enjoy!
