Chicken Calzones

Ingredients

- 2 cans pizza dough
- 8 tsp. pesto
- 16 oz mozzarella cheese, shredded
- 2 tbsp butter
- 2 tbsp olive oil
- ½ cup chopped onion
- 3 garlic cloves, minced
- 1 rotisserie chicken, shredded
- 1 tbsp garlic salt
- 1 tbsp pepper
- 2 cups mushrooms, sliced (optional)
- 3 cups baby spinach, stems removed
- ½ cup ricotta cheese
- 1 cup Parmesan cheese, grated
- Marinara sauce, optional

Instructions

  1. Preheat oven to 350 degrees.

  2. Line 2 baking sheets with parchment paper.

  3. On a clean flat surface, unroll pizza dough; cut in half and half again making 4 squares. Spread 1 tsp. of pesto evenly over half of each dough piece, leaving 1-inch border around sides of dough.

  4. Place dough on prepared baking sheet.

  5. Place 1/8 cup shredded mozzarella cheese over pesto on each dough piece.

  6. In a large skillet, heat butter and olive oil over medium heat.

  7. Add onion and garlic and cook for 2 minutes.

  8. Add chicken and season with garlic salt and pepper and cook for 4 minutes.

  9. Add mushrooms and cook for 4 minutes.

  10. Add spinach and cook for 2 minutes.

  11. Remove from heat; stir in ricotta cheese and Parmesan cheese.

  12. Spoon chicken mixture over mozzarella; place another 1/8 cup mozzarella cheese over chicken mixture.

  13. Fold dough over filling, crimping edges to seal.

  14. Bake for 20 – 25 minutes or until lightly browned.

  15. Cool for 5 minutes before serving.

  16. Serve with marinara sauce if desired.
