Coconut Pound Cake

Cook Time: 75 minutes

Ingredients

- 2 cups butter, softened
- 3 cups sugar, divided
- 2 cups flour, divided
- 6 eggs
- 7 oz can coconut
- 1 tsp vanilla
- 1/2 cup water
- 1 tsp coconut flavoring

- Whipped cream for garnish

Instructions

  1. Grease and flour a tube or bundt pan.

  2. Preheat oven to 350 degrees.

  3. Cream butter and 2 cups of sugar for 7 minutes.

  4. Add 1 cup flour and mix well.

  5. Add eggs one at a time.

  6. Add coconut with remaining 1 cup of flour.

  7. Mix well.

  8. Add vanilla.

  9. Spoon batter into pan; smooth the top and tap the pan on the counter to get out any air pockets.

  10. Bake in the bottom third of the oven for 1 hour and 15 minutes.

  11. For Glaze: Simmer remaining 1 cup water, 1 cup sugar, and coconut flavoring for 10 minutes in a small saucepan.

  12. When cake is finished baking, remove cake from pan.

  13. Using a fork, pierce top of cake and drizzle glaze over entire cake.

  14. Let cool completely before serving.

  15. Garnish with whipped cream and strawberries if desired. Enjoy!
