Grease and flour a tube or bundt pan.
Preheat oven to 350 degrees.
Cream butter and 2 cups of sugar for 7 minutes.
Add 1 cup flour and mix well.
Add eggs one at a time.
Add coconut with remaining 1 cup of flour.
Mix well.
Add vanilla.
Spoon batter into pan; smooth the top and tap the pan on the counter to get out any air pockets.
Bake in the bottom third of the oven for 1 hour and 15 minutes.
For Glaze: Simmer remaining 1 cup water, 1 cup sugar, and coconut flavoring for 10 minutes in a small saucepan.
When cake is finished baking, remove cake from pan.
Using a fork, pierce top of cake and drizzle glaze over entire cake.
Let cool completely before serving.
Garnish with whipped cream and strawberries if desired. Enjoy!
