Cold Spinach Artichoke Dip

Ingredients

- 14 oz can artichoke hearts, drained and chopped
- 8 oz container sour cream
- 1 cup mayonnaise
- 3 tbsp chopped onion
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1 envelope vegetable soup mix
- 10 oz package frozen chopped spinach, thawed and drained

Ingredients for Homemade Tortilla Chips:
- 1 package flour or corn tortillas
- Cooking spray
- Seasoning – salt, garlic salt, or seasoned salt (flavor is up to you)

Instructions

  1. In a large mixing bowl, combine all ingredients. Cover and refrigerate for 30 minutes to 2 days. Serve with fresh vegetables or homemade tortilla chips. Enjoy!

Directions for Homemade Tortilla Chips:

  1. Preheat oven to 350 degrees.
  2. Cut tortillas into triangles or use cookie cutters to make shapes.
  3. Lay tortillas onto a cookie sheet lined with parchment paper.
  4. Spray with cooking spray and season with the seasoning of your choice.
  5. Bake for 8-15 minutes or until golden.
  6. Turn over, spray, and season again.
  7. Return to oven for 3-5 minutes.
  8. Store in a ziplock bag. Enjoy!
