Egg and Cheese Puffs

Ingredients

- 1 lb Bacon
- 16 oz Cottage Cheese
- 10 eggs
- 16 oz Cheddar Cheese, shredded
- 7 oz can Diced Green Chilies
- 1/2 cup Flour
- 1/2 cup Butter, melted
- 1 tsp Baking Powder
- 1/2 tsp Salt

Instructions

Created on April 7th, 2006

  1. Cook bacon. Drain, crumble, and set aside.
  2. In a large bowl, combine eggs, cottage cheese, cheddar cheese, chilies, and bacon. Cover and refrigerate overnight.
  3. The next morning, preheat oven to 350 degrees.
  4. Remove egg mixture from refrigerator; stir in flour, butter, baking powder, and salt. Spoon batter into 24 muffin tins with liners.
  5. Bake for 25-30 minutes or until puffs are slightly golden on top.
  6. Serve immediately and enjoy!
