Greek Chicken Pasta

Cook Time: 15 minutes

Ingredients

- 8 oz uncooked pasta
- 1 TB olive oil
- 3-4 garlic cloves, minced
- ½ red onion, chopped
- 4 chicken breasts, cut into bite-size pieces
- Garlic salt and coarse black pepper, to taste
- 14 oz can marinated artichoke hearts, drained and chopped
- 2 large tomatoes, chopped or 1 can chopped tomatoes
- 2 pkgs crumbled feta cheese
- 3 TB fresh parsley, chopped
- 2 TB lemon juice, fresh squeezed
- 1 TB dried basil

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta according to directions on package.

  2. While pasta is cooking; heat olive oil in a large skillet over medium-high heat. Add onion and garlic, and sauté for 2 minutes.

  3. Season chicken pieces with garlic salt and black pepper, add chicken to the skillet. Cook, stirring occasionally, until chicken is no longer pink, about 6 minutes.

  4. Reduce heat to medium-low, and add the artichoke hearts, tomato, feta cheese, parsley, lemon juice, basil, and cooked pasta. Stir until heated through, about 2-3 minutes. Remove from heat; serve and enjoy!
