Healthy Baked Linguine

Cook Time: 60 minutes

Ingredients

- 1 lb ground beef
- 1 tsp minced garlic
- Pam cooking spray
- 1 (28 oz) can crushed tomatoes
- 1 (8 oz) can tomato sauce
- 1 (6 oz) can tomato paste
- 2 tsp sugar
- 1/2 tsp salt
- 8 oz uncooked whole wheat linguine
- 16 oz nonfat sour cream
- 8 oz fat-free cream cheese, softened
- 1 bunch green onions
- 1 1/2 cups shredded low-fat mozzarella cheese

Instructions

Preheat oven to 350 degrees.

Coat a large skillet with Pam cooking spray. Brown ground beef and garlic, cooking until beef crumbles and is no longer pink.

Drain beef mixture and stir in crushed tomatoes, tomato sauce, tomato paste, sugar, and salt.

Let simmer for 30 minutes.

Cook pasta according to package directions.

Place pasta in a 13x9 baking dish coated with Pam cooking spray.

In a medium mixing bowl, combine sour cream, cream cheese, and green onions.

Spread over linguine.

Top with meat sauce.

Bake at 350 degrees for 20-25 minutes or until bubbly on sides.

Sprinkle with mozzarella cheese, and bake 5 more minutes or until cheese melts.

Let stand 5 minutes before serving.
