Lemon Chicken Tenders

Ingredients

- Paprika
- Salt
- Pepper
- 4 boneless, skinless chicken breasts, cut into 2-inch strips
- 2 eggs, slightly beaten
- 1 cup seasoned bread crumbs (or panko crumbs)
- 1/2 cup sugar
- 1/2 cup fresh squeezed lemon juice (about 2-3 lemons)
- 1 1/2 teaspoons curry powder

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Spray a baking sheet with cooking spray.

  3. Season chicken strips with paprika, salt, and pepper.

  4. Dip strips in egg, then dredge in bread crumbs.

  5. Arrange chicken strips in a single layer on prepared baking sheet.

  6. Bake in preheated oven for 15 minutes, turning once.

  7. While chicken is cooking, in a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes.

  8. Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.

  9. Serve as appetizers or with pasta or rice for main course. Enjoy!
