Lime Cheesecake Squares

Ingredients

- **Crust:**
- 2 cups graham cracker crumbs
- 1 cup finely chopped macadamia nuts
- 1/2 cup sugar
- 6 TB melted butter
- 1 egg white, beaten

- **Filling:**
- 2 (8 oz) pkg cream cheese, softened
- 1/2 cup sugar
- 1/2 cup evaporated milk

- **Lime Topping:**
- 1 3/4 cup sugar
- 4 large eggs
- 2 TB lime zest
- 1/3 cup fresh lime juice
- 1/4 cup flour
- 1/2 tsp baking powder

- **Garnish:**
- Powdered sugar
- Lime slices

Instructions

To make crust:

  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, combine graham cracker crumbs, macadamia nuts, sugar, and butter. Add egg white and mix well.
  3. Press mixture evenly into the bottom of a 13x9 baking dish lined with non-stick foil.
  4. Bake for 8 minutes.

To make filling:

  1. In a medium mixing bowl, combine cream cheese and sugar.
  2. Beat with electric mixer until smooth.
  3. Add evaporated milk and beat until well combined.
  4. Spoon over crust.
  5. Bake for 15 minutes; remove and cool for 10 minutes.

To make topping:

  1. In a medium mixing bowl, combine sugar, eggs, lime zest, and lime juice; whisk to combine well.
  2. In a small bowl, combine flour and baking powder; add to sugar mixture, whisking to combine.
  3. Pour over cream cheese mixture and bake for 40 minutes or until a toothpick inserted comes out slightly sticky.

Cool completely.
Garnish with powdered sugar and lime slices!
