Lori's Potato Salad

Cook Time: 30 minutes

Ingredients

- 4 Baking Potatoes
- 1 bunch Green Onions, diced
- 1 cup Dill Pickle relish
- 1 ½ cups Hellmann’s Mayonnaise
- 2 pkgs Hidden Valley Ranch Dressing Mix
- 6 Eggs, hard-boiled, peeled and chopped

*To boil eggs – place in a saucepan and cover with water. Bring to a boil, turn off heat and place lid on pan. Let sit for 15 minutes. Eggs will be done.*

  1. Peel and cut up potatoes. Place in a saucepan and cover with water. Bring to a boil and cook until tender when pierced with a fork. Pour off water and place back on burner for a couple of minutes (this makes sure all water is gone).

  2. In a large bowl, combine potatoes, eggs, green onions, dill relish, and Ranch dressing mix. Add mayonnaise and mix well.

  3. Chill before serving. Enjoy!
