Orange Chicken

Ingredients

- 4 chicken breasts, cut in 1-inch pieces
- 1/4 cup vegetable oil
- 1 cup orange juice
- 1/4 cup soy sauce
- 1/2 tsp salt
- 3 cloves of garlic, minced
- 1 tbsp brown sugar
- 1/2 tsp red pepper flakes
- 2 tbsp cornstarch
- 1 onion, cut in quarters
- 1 head of broccoli florets

In a small bowl, combine orange juice, soy sauce, salt, garlic, brown sugar, red pepper flakes, and cornstarch. Mix well and set aside.

Heat oil in a large skillet over medium-high heat. When oil is hot, add chicken. Sauté until no longer pink inside (about 7-10 minutes).

(While chicken is cooking, in a saucepan cook minute rice following the directions on the package.)

Add orange sauce mixture to chicken and cook for 5 minutes or until sauce thickens. Add broccoli florets and onion, cover and cook 2 minutes.

Serve over steamed rice.
