Pecan Pie Tartlets

Ingredients

- 12 oz cream cheese, softened
- 2 cups butter, softened
- 3 1/2 cups flour

- 2 TB butter, softened
- 1 1/2 cup brown sugar
- 1 tsp vanilla
- Dash of salt
- 2 eggs
- 1 1/2 cups crushed pecans

Instructions

Preheat oven to 350 degrees.

  1. In a large mixing bowl, combine cream cheese, 2 cups butter, and flour. Blend until mixed well. Roll into 1" balls. Press into mini muffin tins. (Do not grease or use muffin liners)

  2. In another large mixing bowl, mix 2 TB butter, brown sugar, vanilla, salt, eggs, and crushed pecans. Using a tsp, fill each muffin tin.

  3. Bake 15-20 minutes or until edges are golden brown.

  4. Let cool for 2 minutes and remove from muffin tins. Enjoy!
