Preheat oven to 425 degrees.
Grease 12 muffin cups with melted butter, set aside.
In a large mixing bowl, combine corn muffin mix, creamed corn, pepper jack cheese, and eggs.
Stir until batter comes together. Don't overmix.
Fill muffin cups about 2/3 full.
Bake for 12-15 minutes or until golden brown.
Serve with Spicy Black Bean Chili and enjoy!
