Pepper-Jack Corn Muffins

Ingredients

- 1 box Jiffy corn muffin mix (8 1/2 oz)
- 3/4 cup creamed corn
- 4 oz pepper jack cheese, grated
- 2 large eggs
- 2 tbsp melted butter

Instructions

  1. Preheat oven to 425 degrees.

  2. Grease 12 muffin cups with melted butter, set aside.

  3. In a large mixing bowl, combine corn muffin mix, creamed corn, pepper jack cheese, and eggs.

  4. Stir until batter comes together. Don't overmix.

  5. Fill muffin cups about 2/3 full.

  6. Bake for 12-15 minutes or until golden brown.

  7. Serve with Spicy Black Bean Chili and enjoy!
