Pesto Lasagna Rolls

Ingredients

- 10 Lasagna Noodles (not the oven-ready kind)
- 28 oz jar Marinara Sauce
- 2 tsp minced Garlic
- 15 oz container Ricotta Cheese
- 10 oz package frozen chopped spinach, thawed and squeezed dry
- 3 1/2 oz jar Pesto
- 1 egg
- 1 cup grated Parmesan Cheese
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 cup shredded Mozzarella Cheese

Instructions

Preheat oven to 350 degrees

Cook lasagna noodles according to package directions; remove from water and cool on dish towel.

While lasagna noodles are cooking, spread 2 cups of marinara sauce into the bottom of a 9x13 baking dish.

In a large mixing bowl, combine garlic, ricotta, spinach, pesto, egg, parmesan cheese, salt, and pepper.

On cooled lasagna noodles, spread 1/4 to 1/3 cup of ricotta mixture on the noodle.

Roll noodle up; place seam side down in pan.
Repeat with remaining noodles.

Pour remaining marinara sauce over noodles; sprinkle with mozzarella cheese.

Cover with foil and bake for 20 minutes. Uncover and cook until mozzarella is golden brown; 10-15 minutes.

Serve with salad and bread and enjoy!
