Pumpkin Funnel Cakes

Ingredients

- 1 Quart Peanut Oil
- 1 1/2 cup all-purpose Flour
- 1/4 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 1 tsp Pumpkin Pie Spice
- 1 egg
- 1/4 cup Brown Sugar
- 1 cup Canned Pumpkin Puree
- 1 cup Milk

- Powdered Sugar and/or Cinnamon Sugar to sprinkle on top

Instructions

Created on October 29th, 2007

  1. Pour the oil into a deep skillet and heat to 375 degrees.

  2. In a medium mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.

  3. In a large mixing bowl, whisk together the egg, brown sugar, pumpkin puree, and milk. Combine until well blended.

  4. Gradually add the flour mixture, using a whisk, stir till smooth.

  5. Pour 1/2 cup of batter into a funnel or zip lock bag with the corner cut out.

  6. Drizzle the batter into the hot oil using a circular motion, cross over the circle to connect the batter.

  7. Cook until golden, about 2-3 minutes.

  8. Turn the cake over to cook on the bottom side, about 2 minutes.

  9. Use a slotted spoon or tongs to remove from the oil and drain on paper towels.

  10. Sprinkle with cinnamon sugar and/or powdered sugar.
