Pumpkin and Chocolate Chip Cheesecake Muffins

Ingredients

**Filling Ingredients:**
- 8 oz pkg. Cream Cheese, softened
- 1/2 cup Sugar
- 2 TB all-purpose Flour
- 1 egg
- 1/4 cup Sour Cream
- 1 tsp. Vanilla

**Muffin Ingredients:**
- 1 cup Pumpkin
- 2/3 cup Brown Sugar
- 1 cup Milk
- 1/2 cup Vegetable Oil
- 2 eggs
- 3 cups all-purpose Flour
- 1/2 cup Sugar
- 5 tsp. Baking Powder (yes! five!)
- 2 tsp. Cinnamon
- 1 tsp. Salt
- 1/2 tsp. ground Cloves
- 1/2 cup chopped Walnuts
- 1/2 cup Chocolate Chips

**Topping:**
- 1/2 cup Brown Sugar
- 1/2 cup Flour
- 4 TB Melted Butter

Instructions

  1. In medium mixing bowl, combine all filling ingredients. Place in refrigerator while preparing muffins.

  2. Preheat oven to 400 degrees.

  3. Spray 24 muffin tins with Pam or use liners.

  4. In a large mixing bowl, combine pumpkin, brown sugar, milk, oil, and eggs; mix well.

  5. In medium mixing bowl, combine flour, sugar, baking powder, cinnamon, salt, and cloves. Sift into pumpkin mixture.

  6. Hand stir until flour is moistened.

  7. Fold in walnuts and chocolate chips.

  8. Fill muffin cups 2/3 way full.

  9. Fill a zip-lock baggie with the cream cheese mixture. Cut off tip and push the tip into the muffin batter.

  10. Gently squeeze the cream cheese mixture into each muffin.

  11. Combine topping and crumble over muffins.

  12. Bake for 20 – 22 minutes. Remove; let cool; Enjoy!
