Raspberry Crisp

Ingredients

- 4 cups fresh or frozen raspberries or blackberries
- 4 TB sugar
- 2 tsp cornstarch
- 3 tsp water
- 1 tsp lemon juice
- 1 cup quick-cooking oats
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup cold butter

Instructions

Place raspberries in an 8x8 baking dish. In a small bowl, combine the sugar, cornstarch, water, and lemon juice until smooth. Pour over berries.

In a large mixing bowl, combine the oats, flour, brown sugar, and cinnamon; cut in butter with pastry cutter until crumbly. Sprinkle over berries.

Bake, uncovered, at 375°F for 20-25 minutes or until filling is bubbly. Serve warm with ice cream if desired. Enjoy!
