Ricotta Orange Pound Cake

Ingredients

- 1 1/2 cups flour
- 2 1/2 tsps baking powder
- 1 tsp salt
- 1 1/2 sticks butter, room temperature
- 1 1/2 cups whole milk Ricotta cheese
- 1 1/2 cups sugar plus 1 TB
- 3 eggs
- 1 tsp vanilla
- 1 TB almond extract
- 1 orange, zested

- powdered sugar for dusting

Instructions

Created on April 14th, 2008

Preheat oven to 350 degrees.

Grease and flour a 9x5x3 loaf pan.

In a medium bowl, combine the flour, baking powder, and salt.

Using an electric mixer, cream together the butter, ricotta, and sugar until light and fluffy, about 3 minutes.

Add the eggs one at a time.

Add the vanilla, almond, and orange zest until just combined.

Add the dry ingredients, a small amount at a time, until just incorporated.

Pour the mixture into the prepared pan and bake until a toothpick comes out clean and the cake is beginning to pull away from the sides, about 45-50 minutes.

Let cool in the pan for 10 minutes then remove from pan. Let cool completely.

Dust with powdered sugar before serving.

Serve with fresh berries and enjoy!
