Sour Cream Cranberry Bars

Ingredients

- 1 pkg. Craisins
- 1 cup Sugar
- 3 Eggs
- 2½ TB Cornstarch
- 1½ cup Sour Cream
- 1 cup Brown Sugar
- 1¾ cup Old-fashioned Oats
- 1 tsp. Baking Soda
- ½ tsp. Salt
- 1¾ cup Flour
- 1 cup Butter, softened

Instructions

Created on April 18th, 2006

Preheat oven to 350 degrees.
Spray 9x13 baking dish with Bakers Joy.
In a mixing bowl, combine eggs, sour cream, sugar, and cornstarch. Stir in craisins.
Pour mixture into a medium saucepan and cook over medium heat until it thickens. Set aside to cool.
In a large mixing bowl, combine brown sugar, oats, baking soda, flour, and salt. Blend in butter until mixture is crumbly.
Press ½ of mixture into pan. Pour cooked mixture over oat mixture. Crumble rest of oat mixture on top. Press into sour cream mixture.
Bake for 20 minutes. Let cool and serve. Enjoy!
