Southwestern Egg Rolls

Cook Time: 30 minutes

Ingredients

- 1 chicken breast, cooked
- 2 tbsp vegetable oil
- 4 green onions, minced
- 1/2 red bell pepper, minced
- 1/2 cup corn, drained
- 1/2 cup black beans, drained
- 2 tbsp frozen spinach, thawed and drained
- 1/2 jalapeno pepper, minced
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- Pinch of red pepper
- 4 oz Monterey Jack cheese, shredded
- 8 egg roll wrappers

Instructions

Preparation:

  1. Preheat oven to 450 degrees.
  2. Chop and mince green onions, red bell pepper, chicken, and jalapeno pepper. Keep them separate.
  3. Shred Monterey Jack cheese.

Directions:

  1. In a large frying pan, heat oil over medium heat.
  2. Stir in green onions and red bell pepper. Cook until tender, about 5 minutes.
  3. Add chicken and mix well.
  4. Add corn, black beans, spinach, jalapeno pepper, cumin, chili powder, salt, and red pepper.
  5. Cook and stir for about 5 more minutes until well blended and tender.
  6. Remove from heat and stir in cheese. Mix well until melted.
  7. Spoon 2 tbsp of mixture onto egg roll wrapper. Wrap, sealing edges with water.
  8. Place on greased cookie sheet and spray with cooking spray.
  9. Bake at 450 degrees for 15-20 minutes, turning over after 10 minutes. Cook until golden brown.
  10. Serve with cilantro sauce and enjoy!

Creamy Cilantro Sauce
Ingredients:

  • 8 oz Cream Cheese, Softened
  • 1 TB Sour Cream
  • 7 oz jar of Salsa
  • 1 tsp Black Pepper
  • 1 tsp Celery Salt
  • ½ tsp Cumin
  • 2 tsp Garlic Powder
  • 1 cup Chopped Cilantro
  • 1 TB fresh Lime Juice

Preparation:
Chop Cilantro.
In a medium mixing bowl, combine all ingredients with a mixer.
Blend until smooth and creamy.
Serve with Southwestern Egg Rolls and enjoy!
