Spicy Chicken Chili

Cook Time: 45 minutes

Ingredients

- 4 tbsp olive oil
- 1 medium yellow onion, chopped
- 4 cloves garlic, chopped
- 1 1/2 tsp cumin
- 1 tsp salt
- 1 tsp paprika
- 1 large chipotle chile in adobo sauce, finely chopped, sauce reserved
- **or 1 poblano pepper, finely chopped**
- **If using poblano pepper, you'll need 1 small can of chipotle sauce**
- 3 chicken breasts, thinly sliced and chopped
- 2 (14.5 oz) cans diced tomatoes with juice
- 2 (15 oz) cans chili beans with juice
- 15 oz can black beans, drained and rinsed

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onions, garlic, cumin, salt, paprika and chipotle or poblano pepper.

  3. Cook, stirring occasionally, until the onion is softened. About 7 minutes.

  4. Add the chicken and cook, stirring, until the meat begins to change color, about 5-7 minutes.

  5. Stir in the tomatoes, beans, and 1 tbsp of adobo sauce or 1 can of chipotle sauce.

  6. Bring to a boil.

  7. Lower the heat and simmer the chili, stirring often, until thickened, about 25-30 minutes.

  8. Add more of the adobo sauce to taste, if desired.

  9. Serve with grated cheese and sour cream.
