In a large pot, heat the olive oil over medium heat.
Add the onions, garlic, cumin, salt, paprika and chipotle or poblano pepper.
Cook, stirring occasionally, until the onion is softened. About 7 minutes.
Add the chicken and cook, stirring, until the meat begins to change color, about 5-7 minutes.
Stir in the tomatoes, beans, and 1 tbsp of adobo sauce or 1 can of chipotle sauce.
Bring to a boil.
Lower the heat and simmer the chili, stirring often, until thickened, about 25-30 minutes.
Add more of the adobo sauce to taste, if desired.
Serve with grated cheese and sour cream.
