Spicy Chicken Soup

Prep Time: 20 minutes
Cook Time: 30 minutes

Ingredients

- The meat of 1 rotisserie chicken, shredded
- 3 TB olive oil
- 1 yellow onion, chopped
- 3 cloves garlic, chopped (or 3 tsp.)
- 16oz jar chunky salsa
- 1 can Rotel
- 14.5oz canned diced tomatoes
- 14.5oz can whole peeled tomatoes
- 1 15oz can tomato soup
- 3 TB chili powder
- 15oz can corn, drained
- 15oz can black beans, drained
- 16oz can chili beans, undrained
- 2 ½ cans chicken broth (5 cups)

Topping:
- Sour cream
- Shredded cheddar jack cheese

Instructions

  1. In a large stock pot, heat olive oil on medium-high heat.

  2. Add onions and garlic and cook until softened.

  3. Add shredded chicken and the rest of the ingredients.

  4. Simmer for 30 minutes – do not boil.

  5. Serve topped with a dollop of sour cream and cheese!
