Taquitos

Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients

- 1 tablespoon vegetable oil, plus some for brushing on the tortillas
- 1/2 medium yellow onion, finely chopped
- 2 teaspoons minced garlic
- 1 pound lean ground beef
- 1 cup salsa
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 10 flour tortillas
- 1 1/2 cups shredded cheddar cheese

- Sour cream, queso and/or salsa to serve with taquitos

Instructions

  1. Heat the oven to 400 degrees.

  2. In a large skillet, heat 1 tablespoon vegetable oil over medium heat.

  3. Add the chopped onion and garlic; cook for 3 minutes, stirring often. (Be careful not to let the garlic burn)

  4. Add the ground beef, and use a wooden spoon to break it up while it cooks, until it is no longer red, about 5 minutes. Add salt and pepper while cooking.

  5. Stir in 1 cup salsa and 2 teaspoons chili powder.

  6. Cook over medium-high heat, stirring occasionally, until the mixture thickens, about 7-10 minutes.

  7. Top each tortilla with 1/4 cup of beef, spreading not quite to the edges of the tortilla.

  8. Sprinkle about 2 tablespoons shredded cheese on top.

  9. Roll up tortillas and place them seam-side down on a cookie sheet lined with parchment paper.

  10. Brush lightly with vegetable oil.

  11. Bake until tortillas are lightly browned, about 8-12 minutes.

  12. Serve with sour cream, queso, and/or salsa.
